Sherlock’s Poppy Seed Lemon Vegan Muffins

  • 2 or 3 ripe bananas
  • 1/4 cup plant based milk mixed with 1 tbsp. apple cider vinegar
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 1 3/4 cups of flour
  • 1/4 cup almond or coconut flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 spoon lemon zest or lemon essence
  • 1 or 2 spoons of poppy seeds

Turn the oven to 375 degrees F

On a mixing bowl combine the ingredients in the order presented on the list until the mixture is homogeneous

Use cupcake or muffins mold lined with paper for baking

Put approximately 3/4 of the volume that fits on each muffin mold to avoid overflowing

Bake for 23 to 25 minutes

Remove from the oven and let them cool down

Enjoy them with coffee ☕️
