Babaganoush Recipe

1 ea. – Organic eggplant 
1 Tsp – Minced garlic (optional) 
1 1/2 Tbsp. – Olive oil 
½ Lemon – Juice 
Salt & Pepper to taste 
1- Preheat oven to 400 degrees F 
2- Wrap the eggplant on baking paper sprinkled with oil, broil eggplant until it is soften (approximately 40 minutes), turning occasionally, you will be able to peel it with a fork when ready. 
3- Press the eggplant with a fork to make a puree out of it, add all the ingredients into the blender. Make sure to blend slowly and add enough lemon juice or olive oil, to break the solids and go smooth into the blender. Add salt and pepper to taste. Refrigerate before serving 

Serve on one side of the Double wine tray, with Pita bread on the other side. Enjoy it with your favorite beverage!
